Sunday's Cooking Adventures!

As promised, here are yesterday's cooking adventures!

First up - Hulk Pancakes


We were talking in class one day about getting kids to eat healthier. Since most of the class is mothers with kids, this was a good topic, it seemed, lol. This one mother talked about making pancakes with spinach. Of course, those babies would be green, haha! But her son ate them and that's the important part.

She shared her recipe with me (I'll share it with all 5 of you tomorrow if she says it's okay, lol) Up there is the picture of mine, yes, done with my farm animals pancake griddle.

The batter was *really* soupy, but I think that was my fault. I used frozen spinach, and I think I really really needed to rinse it more and Dry It Completely! I will try these again.

Made those. They should have been easy, and for the most part they were. I will say that though my bananas were mostly black on the outside, they were still hard enough in the middle it was difficult to mash them. 

Once they'd cooked for the prescribed amount of time, I took them out, since they looked like they might be burning anyway. They stuck to the pan (so word to the wise, spray it first). And they are super chewy... weird texture, too. I um, also didn't have walnuts so I used slivered almonds. I'll use walnuts next time, haha. 



Next time - they will be 5-6 ingredient cookies, because I will add cinnamon and a little milk, possibly a couple of tablespoons of flour. Yes, I get that that sort of negates the "simplicity" of it, etc, but that's still not a ton of extra work, calories, etc. Not like true cookies that, well, are a lot of work, lol.

So there's report of my cooking adventures from yesterday. Thrilling, eh? Lol
